ingredients
1 cup raw cacao nibs
2 cups walnuts
1 cup raw almonds (or almond meal)
2 cups medjool dates (remove pips)
½ teaspoon salt

method
Process raw cacao nibs in food processor until fine, add walnuts,
almonds and salt, process.

Add pitted dates and process until mixture is like breadcrumbs.

Press mixture into small rectangular tin lined with baking paper, cover with glad wrap and smooth surface.

Refridgerate then cut into small pieces.


raw chocolate balls

ingredients
1½ cups dates
1 cup cashews
½ cup raw cacao powder
little water – teaspoon or two
flaked coconut (blend in food processor or use desiccated coconut)

method
Place dates and cashews in food processor, process until quite fine.
Add cacao and water.
Roll into small balls and roll in coconut.


raw fruit & nut balls

ingredients
2 cups medjool dates  (remove pips)
1 cup dried dates (remove pips)
2 cups raw almonds
1 cup cranberries
½ cup shredded coconut (plus extra to roll balls in)

method
Place almonds in food processor, process until quite fine.
Add remaining ingredients and process until mixed together.
Form into small balls and roll in coconut.
